Paula's philosophy is that beautiful food doesn't have to be complicated. Isn't that great news?!
Paula shares her fabulous recipes with easy to follow instructions; and as if that weren't enough, she photographs the end result so beautifully that you can almost smell the aroma coming right off her webpage!
Here is Paula's latest creation. Try it, or one of her many other inspirational recipes. I know I will! Buon appetito!
1 box linguine
1 large container of crab meat (jumbo lump or claw)
4 cloves of fresh garlic (minced)
2 green onions (chopped thin)
1/2 stick of unsalted butter
extra virgin olive oil
1 cup of dry white wine
juice of half a lemon
salt and pepper
grated Parmigiano Reggiano (optional)
Put on a large pot of water to boil. Season water generously with salt. When the water has almost started to boil, begin making the sauce. (Note: when the water does boil, add the linguine and cook until al dente.)
In a large pan (large enough to hold the sauce and then to add the linguine) add a few good turns of the olive oil and a tablespoon of butter. When the oil is heated add the garlic and onions. Saute for about a minute. Add in the wine and the rest of the butter. Allow sauce to reduce slightly. If sauce reduces too much add more wine and a little more butter. Add in the crab meat, lemon juice and gently stir through. Check the sauce for seasoning. Add salt if necessary.
Drain the linguine, reserving about a cup of the water. Add the drained linguine to the sauce pan and toss gently. If the sauce needs to be thinned, add some of the reserved pasta water. Garnish with fresh Parmigiano Reggiano and pepper. Serve immediately.
