Italy isn't all spaghetti and fettucini, you know! In fact, in the region of Puglia (the heel of the boot) orecchiette (little ears pasta) lines store shelves. Although the recipe is simple with only durum wheat (an important crop of Puglia), water and salt, making the shapes requires years of experience and mastered skill.
In the spring, you can find women in the region sitting outdoors making orecchiette. It's fun to watch as they wield their knives and thumbs to create the little disks. Take a look for yourself in this video:
